Ontario Lamb Is Just Better! Moroccan Spiced Lamb Chops

It was 1 year ago today that truLOCAL was born, and a lot has happened since then! But one of the things we are most excited about is the fact that we're now able to start offering quality meat products that you cant typically find in the grocery store. Over the next few months, you'll start seeing some exciting new products, and kicking it off is the addition of our Ontario raised lamb!

To celebrate, we thought it would be a good idea to give you an easy and delicious recipe using our lamb loin chops! Steph K has worked her magic once again, here's a little bit more about the recipe straight from Steph!

Lamb loin chops are a versatile and easy to cook cut of meat; easily marinated, pan fried, roasted or grilled, they are quick and easy to prepare. This Moroccan Spice Lamb Chop recipe is a simple meal that packs a world of flavour. The mixture of spices in this recipe are spicy and sweet making it an ideal pairing for the rich taste of lamb. These grilled chops are paired with a creamy yogurt harissa sauce to add a little extra heat for those who like it, or add a little extra mint to help cool things off.

Serves 4

Time: 30 minutes

Ingredients:

8 lamb chops loins
1 tsp. coriander
1 tsp. paprika
1 tsp. cumin
½ tsp. cayenne
¼ tsp. salt
¼ tsp. ground pepper
1 tbsp. olive oil
1 lemon, to serve

Sauce:

½ cup full-fat yogurt
½ lemon, juiced
1 tsp. harissa
¼ tsp. salt
Handful fresh mint

Instructions:

In a small bowl, stir together the coriander, paprika, cumin, cayenne, salt and pepper. Evenly season each chop with the spice mixture and drizzle with olive oil.  Massage the mixture into the chop and allow to marinate for 1 hour.

Preheat a griddle pan to high, then cook the lamb for 3 minutes on each side, or until cooked to medium.
While the lamb chops are cooking, in a small dish combine the yogurt, lemon, harissa and sea salt. Stir gently to combine and top dip with finely chopped mint.
Serve the lamb chops warms with harissa-yogurt sauce serve.
