Welcoming 2017 with truLOCAL's Pistachio Crusted Citrus Salmon

Salmon is a great way to incorporate more rich omega-3 fats into your diet, and a delicious way at that. truLOCAL's wild caught Alaskan salmon is caught using a hook and line, and shipped directly to Ontario providing one of the freshest options available. This Pistachio Crusted Citrus Salmon recipe is quick and easy, making it the perfect weeknight dinner. The crunchy pistachio crust, paired with the sweet and tangy sauce, and a splash of citrus enlightens all of your tastebuds in one bite. Serve this salmon with rice and roasted veggies for a warming winter dinner.

Pistachio Crusted Citrus Salmon 

Paleo, Gluten-Free, Dairy-Free Serves 2
Time: 30 Minutes
Difficulty: Easy 


2 salmon fillets 

1⁄2 lemon, juiced 

1 tbsp. Dijon mustard 

1 tbsp. honey 

1⁄4 cup shelled pistachios, roughly chopped 

1⁄4 tsp. sea salt 


Preheat the oven to 400° F. 

In a small bowl, whisk together lemon juice, Dijon mustard and honey. 

Using a large knife or a food processor, roughly chop the pistachios into a course meal. 

Place salmon fillets on a baking sheet and season with sea salt. 

Spoon marinade evenly over each salmon fillet and top with crushed pistachios. 

Transfer to the oven and bake for 15-20 minutes or until cooked through. 

Serve warm and enjoy!
