Wild-Caught Haidacore Tuna

Organic Ocean’s wild Pacific Haidacore albacore tuna are caught by hook-and-line, and the populations that are harvested are healthy, well-managed, with three-to-four year class fish which are comparatively free of mercury accumulation. While albacore has the highest level of Omega-3s of all tunas, this Haidacore, harvested in the fall, has an especially high oil content and flavourful flesh from a diet of oil-rich forage fish. COOKING TIP: A brush of soy sauce and a gentle sear on both sides is really all you need for this melt-in-your-mouth fish. Since it's sushi-grade, you can (and should) enjoy this albacore tuna medium rare. Squeeze some lemon on top and serve it with a fresh salad with a ginger-sesame dressing.
