Icelandic Cod
Cod is a mildly flavoured, dense, flaky white fish packed with vitamin B12, selenium, phosphorus and protein. Cod is meaty and versatile, which makes it a joy to cook with. It'll hold up in a soup or fried for tacos. Cod and corn fritters are always a crowd-pleaser. If you're feeling fancy, go for miso cod.
COOKING TIP: Marinate the cod fillets with soy sauce and mirin. Then, steam it with sliced scallions, ginger, and garlic until it's opaque. Top it with a drizzle of sesame oil and some more scallions. Serve the steamed cod with rice and thank us later.
