Shrimp Burritos

Looking to add some California flair to your dinner table? Look no further! We've got just the recipe to transport your taste buds to the sunny shores of the Golden State with our California-inspired Shrimp Burritos.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • 1/4 cup chopped cilantro (optional)
  • 4 large flour tortillas
  • 1 cup cooked rice (optional)
  • 1 avocado, sliced
  • Sour cream or Greek yogurt (optional)
  • Salsa (optional)
  • Lime wedges (for serving)

Instructions

  1. In a large bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper until evenly coated.
  2. Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until pink and cooked through. Remove shrimp from the skillet and set aside.
  3. In the same skillet, add a little more olive oil if needed, then add the sliced bell peppers and onion. Cook for 5-6 minutes until softened and slightly caramelized. Add minced garlic and cook for an additional 1-2 minutes.
  4. Return the cooked shrimp to the skillet with the peppers and onions. Squeeze lime juice over the mixture and sprinkle with chopped cilantro. Toss everything together until well combined.
  5. Warm the flour tortillas in the microwave or on a skillet until soft and pliable.
  6. To assemble the burritos, spoon some cooked rice onto the center of each tortilla, followed by the shrimp and vegetable mixture. Top with sliced avocado and a dollop of sour cream or Greek yogurt if desired. Add salsa for an extra kick!
  7. Roll up the burritos, tucking in the sides as you go, and place seam side down on a serving plate.
  8. Serve your California-inspired shrimp burritos with lime wedges on the side for squeezing.
