Lamb Loin Chops
Our friends at Lambtastic have been raising quality lambs on their farm in Vulcan, AB since 2012, with a true passion for sustainable and ethical farming. Lamb loin chops are essentially miniature lamb T-bones. Unlike traditional lamb chops, which come from the rib and include a rib bone, loin chops are cut from the waist of the lamb and don’t have that rib bone attached. Similar to a beef T-bone, the smaller side of the loin chop features a tender, flavourful piece of tenderloin. Compared to rib chops, loin chops are leaner, making them a perfect choice for those who prefer a lighter, yet still delicious, cut of lamb.
COOKING TIP: Loin chops are lean and cook quickly, making them perfect for dry heat methods like pan-searing or grilling. Keep a close watch and cook until they reach an internal temperature of 145°F for a juicy medium-rare finish. For a delicious pairing, serve with fresh mint chutney and crispy halloumi fries to elevate every bite.
