Locally raised in Simcoe, Ontario, Townsend Butchers' buffalo are free-roaming all year round. Compared to beef, buffalo is higher in protein but lower in fat, cholesterol, and calories. It also tends to be higher in iron which gives its meat a more earthy, mineral flavour. These massive 8oz burgers are a great way to try a new form of protein. In case you are wondering, buffalo and bison are the same thing.

COOKING TIP: Grill these burgers for a few minutes on each side and slide them on some buns or directly on your plate with a side of grilled veggies. An internal temperature of 140°F is medium-rare and 160°F is well done.
