Organic Bone-In Pork Chops

These chops are cut from the section just behind the rib cage, right before the ham, and are known as bone-in loin chops, the pork equivalent of a beef striploin. Lean like a boneless tenderloin, the bone adds extra flavour, making each chop juicy and delicious.
COOKING TIP: Season bone-in pork chops generously with salt and pepper and pan-sear for 3 to 5 minutes per side until golden brown. Remove the chops and sauté thinly sliced apples with butter, adding onions, garlic, or rosemary if you like. Deglaze the skillet with a splash of chicken stock or wine, then return the chops to finish cooking as the sauce reduces. Cook to an internal temperature of 145°F and let rest for a few minutes. Serve with the rich, fruity pan sauce for a simple yet impressive meal.
