Organic Bone-In Pork Chops

Pork chops are cut from behind the rib cage section just before the leg (or ham) of the pig. Bone-in loin pork chops are the equivalent of a beef strip steak. It's a fairly lean cut like a boneless tenderloin, however, the bone gives this piece a lot of flavour.  


COOKING TIP: Our favourite way to cook a bone-in pork chop is in a skillet with a generous seasoning of salt and pepper. Pan-sear the chops for about 3-5 minutes so they're brown on each side. Transfer the chops to a plate and add thinly sliced apples into the skillet with some butter (or oil). Onions, garlic, and rosemary also go well with this. Add some chicken stock or wine to deglaze the pan and then nestle the chops back in to cook for a few more minutes while the sauce reduces. You're looking for an internal temperature of 145°F and you'll want to let the chops rest for just a couple of minutes before digging in.
