Pasture-Raised Salt and Pepper Chicken Sausage
There are only three ingredients in these salt and pepper sausages: ground chicken, salt, and pepper. Just the way it should be. What makes these sausages special? The chickens are raised by Cory Van Gronigen entirely outdoors. These pasture-raised chicken never live in barns, but don't worry, they have small huts to protect them from predators. The beautiful hilltop farm in Cayuga, Ontario has been passed down through the generations since the 1970s.
COOKING TIP: These versatile sausages can be grilled, pan-fried, or baked. But since chicken is leaner than beef or pork, you want to make sure not to over cook them. You'll know these sausages are done when they reach an internal temperature of 165°F. Any higher and you might end up with dry sausages.
