Bison Stew
Canadian Rangeland raises their free-roaming bison near Lacombe, AB. Also known as buffalo, bison is higher in protein but lower in fat and cholesterol in comparison to beef. As for the taste, it's not gamey if that's what you're worried about. It's similar to beef, even a bit more delicate or sweeter. Stewing cuts tend to be tougher than steak cuts, which just means they need a little bit more cooking time at a lower heat.
COOKING TIP: Take advantage of stewing bison to make a warming dish on a cool night. Stew meat requires slow cooking in order to tenderize the otherwise tough meat. Be sure to quickly sear the all the sides of the stewing beef and then set it low and slow. Add some baby potatoes, carrots, and onions to your stew base for built-in sides. Don't forget to garnish your stew with some parsley!
