Bacon-Wrapped Scallops
What happens when you take two completely opposite things and combine them? Well, usually, it doesn’t go well - except in the case of scallops and bacon (oh, and peanut butter and jam). Our friends at Organic Ocean have combined the most coveted of all the scallops with delicious bacon to give a balance of succulent, sweet seafood with salty, smoky bacon. The scallops are wild-caught Sashimi-quality Hokkaido scallops, highly prized in the sushi-culinary scene because of their size, meatiness, and amazing flavour. The bacon is naturally smoked, Canadian-raised bacon. Together, they are the best appetizer that you will want to serve as a main. Question: If bacon makes everything better and the scallops are already the best in the world, what is better than the best? Mind blown.
COOKING TIP: Once thawed, these beauties should be pan-seared to add a little caramelization to them. Heat a frying pan on high, add some butter or oil while you add salt and pepper to the scallops and sear them for about 2 minutes on either side or until they look opaque but are still soft to the touch (like well set jello). If you prefer your bacon a little crispier, you can start by cooking the scallop on edge so the bacon is on the pan, rotating as the bacon cooks and then searing the scallop for about 1 minute on either side.
