Wild-Caught Sablefish (Black Cod)
It's buttery, it's rich, it's sablefish. Finest At Sea provides wild-caught, sashimi-grade sablefish from the coast of British Columbia. Sometimes known as black cod, sablefish is a great source of omega-3 fatty acids. It has a mild, sweet flavour and a velvet-like texture making it a treat for any meal.
COOKING TIP: Pan searing is the best way to cook this melt-in-your-mouth fish. Simmer the fillets in a mixture of soy sauce, ginger (fresh or paste), rice vinegar, and some oil. As it cooks, baste the sablefish with the soy-sauce mixture. It'll need just a few minutes on each side. Gently remove the fillet from the pan and let the sauce reduce. Pour it over the fish and top with scallions. The thick flakes should melt right off with the slightest touch of your fork. Morels are a great addition to this dish, but any mushroom will do the trick.
