Wild Caught Pickerel
Did you know? Springhill’s Pickerel, sometimes known as Walleye, is both Ocean Wise recommended and Marine Stewardship Council (MSC) approved for being a sustainable and responsibly caught fish. Our friends at Springhills have partnered with a fisherman's co-op on lake Erie to bring you one of the only native Ontario wild species that are fished responsibly. Pickerel is known for its mild, sweet flavour and firm texture. So if you're just starting to dip your toes into the world of seafood, this is a great place to start. Note: As with any fish, this pickerel fillet may contain small bones.
COOKING TIP: These thin fillets of wild-caught pickerel work best baked with some lemon, garlic, and herbs or lightly breaded and pan-fried. We love Pickerel in fish tacos. As they cook, the fillets will turn more opaque and off-white. Since the flavours of this fish are quite delicate, you'll want to choose sides that won't overpower it. Roasted cauliflower, asparagus, or baby potatoes are all good options.
