Bacon Wrapped Wild Scallops
Scallops are often referred to as the candy of the sea. They have a succulent, tender, buttery texture, with a mild sweet flavour. Our friends at Afishionado in Bedford, Nova Scotia, have wrapped some wild caught 20/30 size Atlantic scallops in local bacon to make one of our all-time favourite appetizers. SERVING SUGGESTIONS: No need to thaw, just remove from packaging and separate on a baking tray. If you are looking for extra crispy bottoms, use a wire rack on top of the baking tray. Bake on the middle rack in a 425°F (220℃) oven for about 10 minutes, then remove from oven and flip the scallops. Return to oven for another 15-20 minutes or until the bacon is crispy and the scallops are a minimum internal temperature of 74℃ (165°F). For an elevated presentation, brush scallops with some melted garlic butter after baking and sprinkle with a green herb, like chives or parsley before serving.
