Salted Grass Fed Butter

This salted butter from Rolling Meadow Dairy starts with antibiotic free milk from grass fed cows traditionally raised on Canadian farms with herds less than 100 head. With only two ingredients….grass fed cream and sea salt…this butter is rich and delicious with a bigger dose of omega 3 fatty acids than conventional butter. Cows that have grazed on pasture contribute valuable and natural fertilizer to the farms, which reduces soil erosion, and enhances plant growth. Anecdotally, we have heard that grass fed dairy is also easier to digest than conventional milk. Grass fed is better for the animals, you, and the planet.

COOKING TIP: Is there anything that doesn't taste better with butter? We love to spread this butter on freshly baked sourdough bread. Have you ever made a compound butter to top grilled steaks or fish? Here's a quick recipe: mix a half cup of softened butter with a teaspoon of lemon juice, a minced clove of garlic, 3 tablespoons of chopped fresh parsley, and 1 tablespoon of your favourite mixed fresh herbs (ex. Chives, oregano, thyme, basil or tarragon), and a pinch of salt and pepper. Form the mixture into a log and chill it in the fridge wrapped in parchment. Top any red meats, fish, seafood, veggies or potatoes with compound butter the next time you want to impress your guests!
