The breast is the leanest part of a chicken and is completely white meat. The choice whether to cook with the skin on and bone in really just comes down to preference and what you are using it for. Opt for bone-in, skin-on when making stocks and stews for added flavour or when grilling. While less lean, the extra layer of fat from the skin allows it to be more forgiving when cooking, so you're less likely to end up with a dry chicken breast.
