COOKING TIP: Grab your cast-iron skillet or roasting pan for this one. Preheat your oven to 500°F. Rub the chicken all over with oil or butter, then season generously with salt, pepper, and garlic. Once the oven is hot, place the chicken breast-side up and roast for 15 minutes. Lower the temperature to 350°F and continue roasting until the skin on the breast turns golden brown. Check the internal temperature by inserting a meat thermometer into the thickest part of the thigh. Remove the chicken once it reaches 165°F. Let it rest for 15 minutes before carving and serving for juicy, perfectly cooked chicken every time.
