COOKING TIP: For best results, cook this steak using a reverse sear: season generously with salt and let it come to room temperature, then cook slowly over indirect heat (or in a low oven around 250°F) until it reaches about 10–15°F below your desired doneness. Finish with a hot, quick sear on the grill or in a cast-iron pan to develop a rich crust, then let it rest for 5–10 minutes before slicing to keep it juicy and tender.
