Buffalo Bones
If you're new to buffalo, you might know it as bison. Either way, it's a leaner alternative to beef while being higher in protein but lower in fat, cholesterol, and calories. Townsend Butchers uses Ontario-raised buffalos for this nutritious product. Packed with iron, zinc, B vitamins, glucosamine, chondroitin, and collagen, buffalo bones add as much in nutrients as they do flavour into stocks, stews, and even gravy.
COOKING TIP: The simplest way to get the most out of buffalo bones is an easy sipping bone broth. Start by roasting the bones in the oven (add garlic and onions for extra flavour!). Once lightly browned, transfer them to the stove or a slow cooker and cover the bones with water. Add some salt and a splash of wine or apple cider vinegar and then let it simmer for 8 to 16 hours. You can add any additional herbs and spices at the end. Skim any foam off the top and it's ready for sipping!
