Just a few years ago, buffalo (also known as bison) seemed pretty exotic. However, in recent years, buffalo has become rather easy to find popping at farmer’s markets and grocery stores alike, and with good reason, buffalo has a ton of health benefits. Although both beef and buffalo are great options, buffalo is a great alternative to traditional beef or a great option when you are simply looking for something a little different. So here is a case for buffalo, and why you should include some in your next box.

 

1. High in Protein, Low in Fat

Buffalo has a great fat to protein ratio, with a higher protein and lower fat content.  Although similar to grass-fed beef, buffalo is a great option for those looking to increase their protein intake while minimizing their overall fat intake.

2. Rich in Omega-3s

All red meat contains omega-3 fatty acids, however, buffalo that are wild and raised outdoors have a better total fatty acid concentration, with less omega-6s and more omega-3. Most grain-fed meat has an imbalance of fatty acids, tilting the scale toward omega-6s which are inflammatory in excess, however the ratio of omega-3 to omega-6 in buffalo is much closer to the 1:1 or 2:1 ratio for optimal health.

3. Rich in Iron & B Vitamins

Like all red meat, buffalo is a rich source of iron, which is what gives it its bright red colour. In addition to iron, buffalo is also a rich source of essential B vitamins, which are critical for boosting energy levels, memory, and mood.

4. Sweet and Tender Taste

Chefs suggest that bison has a slightly sweeter and more tender taste than conventional beef. Although buffalo is a lean cut of meat, its richness provides a depth of flavor that conventional beef does not.

5. Versatile Ingredient

Buffalo meat is available in many formats making it a very versatile ingredient to cook with.  Whether it’s ground meat, stewing meat, ribeye, bones or burgers, the recipe options are endless when it comes to buffalo meat.
