This 100% grass-fed and finished beef comes from Gemstone Grass Fed Beef, a fourth-generation family farm near Calgary, Alberta. Since 1932, the Doerksen family has used regenerative farming to care for their cattle, the land, and deliver high-quality, sustainable beef.
COOKING TIP: We recommend braising these beautiful short ribs for the best flavour and tenderness. Braising begins by lightly searing the meat to lock in its natural juices and build a rich, savoury base. The ribs are then slowly cooked at a low temperature, ideally 275°F (135°C) for 3.5 to 4 hours, in a covered pot with a flavourful combination of beef stock, red wine, and tomato paste. For an extra layer of depth, sauté some celery, onions, carrots, and whole garlic cloves before adding them to the pot along with a sprig or two of rosemary. The result is fall off the bone tender ribs infused with bold, comforting flavours.
