Butternut squash has a mild, sweet, and nutty flavour that is similar to pumpkin. The bright orange fleshy pulp is moist and delicate. While butternut squash is arguably the tastiest of the squashes (cucurbitaceae family), it can be one of the most difficult to prepare but the folks at Green Organic have made it easier for you. They’ve peeled, seeded, diced and frozen local Ontario grown organic butternut squash into 500g packages. These butternut squash cubes were flash frozen hours after harvest, sealing in the delicious flavour, bright colour, and essential nutrients. One cup of squash gives you 100% of your vitamin A daily requirements, which is essential for immune and eye health. Your body needs a healthy fat to absorb vitamin A, so always drizzle a little olive oil or melt some grass fed butter on your squash to improve fat soluble vitamin absorption. Squash is one of North Americas oldest crops, dating back 10,000 years in Mexico and Central America.


COOKING TIP: You can cook this squash from frozen, no need to thaw it first. Butternut squash is amazing in pureed soups and stews. We love to make a beef stew with squash and other root veggies like carrots, turnips and parsnips. Or you can roast frozen squash by first tossing it in some olive oil, salt and pepper, then spreading it on a baking sheet and popping into a 450℉ oven. Make sure to turn or flip the squash half way through roasting as the higher sugar content tends to burn quickly. Roasted squash is great in salads, or in whole grain bowls.
