COOKING TIP: This thick, show-stopping steak deserves a thoughtful approach. While it can be pan-seared, oven-roasted, grilled, or cooked sous-vide, we recommend combining high heat (for that crave-worthy crust) with lower, slower heat (to cook the interior evenly).

Our favourite method? Sous-vide followed by a hot sear. This method ensures edge-to-edge perfection, finished with a beautiful, caramelized crust. Don’t have a sous-vide? No problem. Fire up your BBQ, sear the steak over high heat to get those coveted grill marks, then move it to indirect heat to finish cooking to your preferred doneness.

No matter how you cook it, always use a meat thermometer to nail the perfect temp, and don’t forget to let it rest for a few minutes before slicing. That’s the secret to juicy, flavour-packed bites every time.
