Pork Tenderloin
Pork tenderloin is a long, slender, boneless cut that runs along the backbone of the pig. It is the most tender cut you will find, thanks to the muscle’s minimal use, and it is naturally low in fat. That leanness means the flavour is on the milder side, but do not let that fool you. With the right bold sauce or seasoning, pork tenderloin transforms into a juicy, flavour packed centrepiece that is anything but boring.

COOKING TIP: Baking your pork tenderloin is a great way to get the most return with minimal effort. An internal temperature of 145°F (63°C) is perfect to keep it juicy and tender. Once it hits that magic number, let it rest for about 5 minutes so the juices stay locked in. For flavour, try marinating with herbs and garlic, baking it with apples and onions, or simply seasoning with salt and pepper and serving with chimichurri.
