COOKING TIP: For ultra-tender pork side ribs with minimal effort, try steaming them before baking or grilling. Place the ribs on a rack above a tray of simmering water (you can toss in garlic, onion, or herbs for extra flavor), cover tightly with foil, and steam in a 300°F (150°C) oven for about 90 minutes. This gently renders the fat and breaks down tough connective tissue without drying the meat out. After steaming, finish the ribs on the grill or under the broiler with your favorite sauce to create a sticky, caramelized crust, faster than slow baking but just as satisfying.
