COOKING TIP: Cook boneless chicken thighs over medium heat rather than high to let the natural fat render slowly and keep the meat juicy. Sear until deeply golden on the outside, then cook to a minimum internal temperature of 165°F (74°C) for the most tender, flavourful result. Let them rest a few minutes before slicing to keep the juices locked in.
