COOKING TIP: For a perfectly juicy air-chilled whole chicken, roast it breast-side up at 425°F (220°C). Pat it completely dry, rub with oil or butter, and season with your favourite herbs or spices. Roast until the breast reaches 160°F (71°C) and the thigh reaches 175-180°F (79-82°C), then let it rest for 10–15 minutes before carving. This gives you golden, crispy skin and tender, flavourful meat throughout.
