COOKING TIP: For perfectly crispy bacon, bake the thawed medallions on a wire rack over a baking sheet at 400°F (205°C) for 20–25 minutes, until the bacon is golden and the pork reaches 145°F (63°C). Let them rest a few minutes before serving to lock in juices. For an extra crunch, broil 1–2 minutes at the end, watching carefully so the bacon doesn’t burn.
