Buffalo Ribeye
Locally raised in Simcoe, Ontario, Townsend Butchers' buffalo are free to roam all year round. Compared to beef, buffalo is higher in protein but lower in fat, cholesterol, and calories. It also tends to be higher in iron which gives its meat a more earthy, mineral flavour.
COOKING TIP: Often considered the steak of all steaks, there are 3 things you need to do regardless of how you cook it: bring it to room temperature and pat it dry before cooking, and let it rest for 5 minutes after cooking no matter how good it smells. This tender, juicy cut belongs on the grill but can also be cast iron skillet or pan-seared and finished in the oven with garlic and rosemary. Pair it with a baked potato and call it a night.
