A new addition to the pork line-up from Townsend butchers, the side ribs are great for the BBQ, oven, or even the slow cooker. Otherwise known as “spare ribs”, the side ribs are typically flatter than back ribs and contain more fat, making them the more tender and juicy option. They are cut from the lower portion of the pig - specifically the belly and breastbone, behind the shoulder. Like other pork, this pork is antibiotic-free and on a vegetarian diet so you can feel good about what you’re eating!
COOKING TIP: Short ribs can be made many different ways including baked, braised, and slow-cooked. Our favourite is definitely on the BBQ covered in BBQ sauce. Try pre-cooking them in the oven first to make them extra tender!
