Stewing Buffalo
Townsend Butchers raises their free-roaming buffalo in Simcoe, ON. Also known as bison, buffalo is higher in protein but lower in fat and cholesterol in comparison to beef. As for the taste, it's not gamey if that's what you're worried about. Similar to beef but even a bit more delicate or sweeter. Stewing cuts tend to be tougher than steak cuts, which just means they need a little bit more cooking time at a lower heat.
COOKING TIP: Take advantage of stewing buffalo to make a warming dish on a cool night. Stew meat requires slow cooking to tenderize the otherwise lean meat. Add some baby potatoes, carrots, and onions to your stew base for built-in sides. Don't forget to garnish your stew with some parsley!
