COOKING TIP: For a juicy, flavourful whole fresh turkey with crispy skin, dry brine it at least 24 hours before roasting by rubbing it all over (and under the skin, if possible) with kosher salt mixed with optional herbs and a bit of sugar. Let it sit uncovered on a rack in the fridge for 24–48 hours to deeply season the meat and dry out the skin. Before roasting, bring the turkey to room temperature for about an hour, and consider roasting it breast-side down for the first half of cooking to keep the breast meat extra moist.
