Keto Greek Chicken Souvlaki Bowl

Ingredients
- two boneless, skinless chicken breasts, cubed
- half cup olive oil
- two tbsp vinegar
- half lemon, juiced
- two tbsp gyro spice or oregano
- one tsp dried dil
- one tsp black pepper
- one tsp sea salt
- half tsp red chili flakes
- three cloves garlic, minced
- one cucumber, chopped
- one red bell pepper, chopped
- one green pepper, chopped
- half red onion, chopped
- four oz feta cheese, crumbled
- half cup olive oil
- one tbsp red wine vinegar
- one tsp dried oregano
- pinch of sea salt and pepper
Instructions
Marinade :
- In a large bowl, mix all of the marinade ingredients until smooth. Add the chicken, stir and let sit for 24-48 hours.
Chicken:
- Preheat the oven to 400F (or the BBQ to medium heat) and line a baking sheet with parchment paper.
- After marinating, place the chicken cubes on skewers (about 5-7 pieces per skewer) and place on the baking sheet.
- Bake in the oven for 20 minutes, flipping halfway through or on the BBQ for 6-7 minutes per side.
Salad:
- Chop all of the ingredients and mix together in a large bowl.
- In a small mason jar, add the salad dressing ingredients and shake until combined.
- Pour the dressing over the salad and mix.
- Serve the salad with a skewer of chicken and an optional side of tzatziki!
