Schnitzel and Sweet Potato Mash

A classic meal that is healthy enough to make regularly! Enjoy this dish with a side salad for a crowd-pleasing meal!

Ingredients

  • 2 pieces schnitzel
  • 2 eggs
  • 1 1/2 cup breadcrumbs
  • 4 medium sweet potatoes
  • 1 tbsp honey
  • 2 tsp salt
  • 1/2 tbsp pepper
  • 1/2 tbsp garlic powder
  • 1/2 tbsp butter
  • 1/2 tbsp parsley
  • 8 mushrooms, sliced
  • 1/2 white onion, sliced
  • 1/2 tbsp butter
  • 1/2 tbsp cornstarch
  • 1 tsp water
  • 1/2 cup beef broth
  • 1 tsp pepper
  • 1/2 tsp salt
  • 1/2 tbsp BBQ sauce
  • 2 tsp soy sauce

Instructions

  1. Add sweet potatoes to a pot of boiling water. Boil for 30 minutes (or until fork tender).
  2. Once cooled, peel the skin off the sweet potatoes. 
  3. Mash the potatoes until there are no more crumbs. Add in the honey, salt, pepper, garlic powder, butter, and parsley (and any other seasonings you like). 
  4. Crack two eggs into a bowl and whisk,
  5. Dip the @trulocal schnitzel into egg and then into the breadcrumbs. Shake off excess. 
  6. Air fry at 375F for 8-10 minutes (or until fully cooked).
