Schnitzel and Sweet Potato Mash
A classic meal that is healthy enough to make regularly! Enjoy this dish with a side salad for a crowd-pleasing meal!
Ingredients
- 2 pieces schnitzel
- 2 eggs
- 1 1/2 cup breadcrumbs
- 4 medium sweet potatoes
- 1 tbsp honey
- 2 tsp salt
- 1/2 tbsp pepper
- 1/2 tbsp garlic powder
- 1/2 tbsp butter
- 1/2 tbsp parsley
- 8 mushrooms, sliced
- 1/2 white onion, sliced
- 1/2 tbsp butter
- 1/2 tbsp cornstarch
- 1 tsp water
- 1/2 cup beef broth
- 1 tsp pepper
- 1/2 tsp salt
- 1/2 tbsp BBQ sauce
- 2 tsp soy sauce
Instructions
- Add sweet potatoes to a pot of boiling water. Boil for 30 minutes (or until fork tender).
- Once cooled, peel the skin off the sweet potatoes.
- Mash the potatoes until there are no more crumbs. Add in the honey, salt, pepper, garlic powder, butter, and parsley (and any other seasonings you like).
- Crack two eggs into a bowl and whisk,
- Dip the @trulocal schnitzel into egg and then into the breadcrumbs. Shake off excess.
- Air fry at 375F for 8-10 minutes (or until fully cooked).
