Mixed Veggie and Rice Soup

The perfect blend of proteins and vegetables all wrapped up in a creamy broth based sauce!

  • 7 mushrooms, chopped
  • 1/2 tbsp vegetable oil
  • 1/2 onion, chopped
  • 2/3 cup rice
  • 1 cup mixed vegetables (e.g. corns, carrots, peas, etc.)
  • 2 packages chicken broth
  • 1/4 cup heavy cream
  • 1 tsp pepper
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano


  1. To a pot add vegetable oil and add in the onions and mixed veggies. Let them cook for 4-5 minutes. 
  2. Once the veggies are cooked, add in the rice (uncooked). Let it brown for 2 minutes. 
  3. Pour in the chicken broth and heavy cream and add the pepper, salt, garlic powder, and oregano. Let it cook for 8-9 minutes (or until the rice is cooked)
