Mixed Veggie and Rice Soup
The perfect blend of proteins and vegetables all wrapped up in a creamy broth based sauce!

- 7 mushrooms, chopped
- 1/2 tbsp vegetable oil
- 1/2 onion, chopped
- 2/3 cup rice
- 1 cup mixed vegetables (e.g. corns, carrots, peas, etc.)
- 2 packages chicken broth
- 1/4 cup heavy cream
- 1 tsp pepper
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp oregano
- To a pot add vegetable oil and add in the onions and mixed veggies. Let them cook for 4-5 minutes.
- Once the veggies are cooked, add in the rice (uncooked). Let it brown for 2 minutes.
- Pour in the chicken broth and heavy cream and add the pepper, salt, garlic powder, and oregano. Let it cook for 8-9 minutes (or until the rice is cooked)
