Turkey Chili and Cornbread Muffins

  • 1 package ground turkey
  • 1/2 onion
  • 2 cups canned crushed tomatoes
  • 1 cup kidney beans
  • 1/2 cup tomato juice
  • 1/2 cup corn
  • 1 tbsp Everything Bagel Seasoning Spice Blend
  • 1 tbsp Taco Spice Mix
  • 1 tbsp chili powder
  • 1 can creamed corn
  • 1 cup corn meal
  • 1/3 cup egg whites


1. Spray a large pot with non stick spray. Chop the onion into chunks and add to the pot. Bring to medium heat. Add the ground turkey.

2. Sauté the turkey until it starts to brown and cook. Add the crushed tomatoes, kidney beans, tomato juice, corn and spices. Mix well. Lower the heat and bring to a simmer.

Directions for cornbread muffins:

Preheat oven to 350°. Line a muffin tin with silicone cupcake liners. Mix all of the ingredients together in a medium bowl. Divide into 8 of the muffin cups. Bake for 20 minutes. Enjoy!
