Maple Mashed Butternut Squash
This speedy recipe is a fall favourite. It pairs well with roast turkey or pork.
Ingredients
- 1 package 500g (17 oz) of frozen cubed butternut squash
- 1 cup of water
- 2 tablespoons of butter
- 2 tablespoons of maple syrup
- Pinch of salt and pepper
Instructions
- Bring the water and butternut squash cubes to a boil
- Cook for 5 min
- Drain well
- Add 1 tablespoon each of butter and maple syrup
- Add a pinch of salt and pepper to taste
- Mash by hand or for a smoother texture, transfer to a food processor and pulse to puree
- Transfer to a serving dish and garnish with a pat of butter and more maple syrup
