Crispy Smashed Potatoes
Potatoes? In crispy form with bacon? Is there anything better? Oh wait, there's also cheese on them...

Ingredients
- 5-6 medium potatoes
- 1 tbsp fresh rosemary
- 1/2 tbsp garlic powder
- Salt and pepper
- 4 strips of @trulocal bacon
- Parsley/green onions
- 1/2 cup cheese of choice
Instructions
- Peel potatoes and boil in a pot of water until fork tender (about 30 minutes).
- Transfer the potatoes to a lined sheet pan and use a bowl to smash down the potatoes.
- Drizzle on some oil and add some seasoning (rosemary, salt, pepper, garlic powder)
- Bake at 350F for 50 minutes.
- To a pan on medium heat cook up some @trulocal bacon for 2-3 minutes per side. Once done, chop it up into smaller pieces.
- Top with shredded cheese and green onions/parsley, and the bacon strips.
- Broil on high for 3 minutes until the cheese is nice and golden.
