Crispy Smashed Potatoes

  • 5-6 medium potatoes
  • 1 tbsp fresh rosemary
  • 1/2 tbsp garlic powder
  • Salt and pepper
  • 4 strips of @trulocal bacon
  • Parsley/green onions
  • 1/2 cup cheese of choice


  1. Peel potatoes and boil in a pot of water until fork tender (about 30 minutes). 
  2. Transfer the potatoes to a lined sheet pan and use a bowl to smash down the potatoes. 
  3. Drizzle on some oil and add some seasoning (rosemary, salt, pepper, garlic powder) 
  4. Bake at 350F for 50 minutes. 
  5. To a pan on medium heat cook up some @trulocal bacon for 2-3 minutes per side. Once done, chop it up into smaller pieces. 
  6. Top with shredded cheese and green onions/parsley, and the bacon strips. 
  7. Broil on high for 3 minutes until the cheese is nice and golden.
