Smoked Sirloin Tip Roast with Garlic Herb Compound Butter

Ingredients
- 1/2 cup sea salt bu er, room temperature
- 1/2 tsp pepper
- 4 cloves of garlic, minced
- 2 tsp lemon zest
- 1/4 cup chopped fresh herbs (rosemary, thyme, and parsley)
- 1 tsp granulated garlic powder
- 1 tsp dehydrated onion powder
- 1 tsp pepper
- 2 tsp kosher salt
- 2 tbsp avocado oil
- 1/4 cup chopped fresh herbs (rosemary, thyme, and parsley)
Instructions
- Take the roast out of the fridge 1 hour prior to cooking.
- Meanwhile, blend the bu er, pepper, lemon, garlic, and herbs till fully incorporated.
- Place half the butter onto a piece of plastic wrap. Shape the bu er into a log, wrap the plastic wrap around it, roll it to smooth the outside, and then refrigerate.
- In a second bowl blend the garlic powder, onion, pepper, and salt to create a rub.
- Preheat a pellet grill or smoker to 225°F.
- While the grill heats rub the en re roast with oil. Season the roast evenly on all sides with the rub.
- Take the other half of the bu er that wasn’t refrigerated and smooth it across the top of the roast.
- Sprinkle the surface of the roast with the additional 1/4 cup of herbs.
- Place the roast directly on the grill and smoke for 3-3.5 hours ll an internal temp of 145°F is reached.
- Remove the roast from the grill and allow it to rest for 10min.
- Slice and serve with a dollop of the compound butter.
