Moroccan Spiced Lamb Chops

Lamb loin chops are a versatile and easy to cook cut of meat; easily marinated, pan fried, roasted or grilled, they are quick and easy to prepare. This Moroccan Spice Lamb Chop recipe is a simple meal that packs a world of flavour. The mixture of spices in this recipe are spicy and sweet making it an ideal pairing for the rich taste of lamb. These grilled chops are paired with a creamy yogurt harissa sauce to add a little extra heat for those who like it, or add a little extra mint to help cool things off.

Ingredients

  • eight lamb loin chops
  • one tsp coriander
  • one tsp paprika
  • one tsp cumin
  • one tsp cayenne
  • one tsp salt
  • one tsp ground pepper
  • one tbsp olive oil
  • one lemon, to serve
  • one cup full-fat yoghurt
  • one lemon, juiced
  • one tsp harissa
  • one tsp salt
  • one handful fresh mint

Instructions

1. In a small bowl, stir together the coriander, paprika, cumin, cayenne, salt and pepper. Evenly season each chop with the spice mixture and drizzle with olive oil.

2. Massage the mixture into the chop and allow to marinate for 1 hour.

3. Preheat a griddle pan to high, then cook the lamb for 3 minutes on each side, or until cooked to medium.

4. While the lamb chops are cooking, in a small dish combine the yogurt, lemon, harissa and sea salt. Stir gently to combine and top dip with finely chopped mint.

5. Serve the lamb chops warms with harissa-yogurt sauce serve.
